Just Another Meatless Monday

In an attempt to support Meatless Monday, I whipped up this surprisingly light dish—but I guess that depends on how many scoops of orzo you top your zucchini halves with. You could totally use one half of the zucchini with the orzo as a side dish to a fish or meat entrĂ©e another day of the week. I definitely feel better when I eat vegetarian, but I can't pass up a good ol' meatball!
